Hummus
This smooth Halal Hummus recipe will remind you of Hummus you may have had in an Arabian restaurant. Wherever you go in the Middle east or along the coasts of the Mediterranean sea you will find Hummus to be a staple item. This recipe is based on 100% halal ingredients. And it is very simple. There are only 5 ingredients in total, two! if you exclude salt, lemon and oil. Why not use our timer to time yourself? Just click the timer 5 Minutes You will need a food processor. You may use a blender but you might find the chickpeas to get stuck at the bottom.
So there are two types of chickpeas, raw or canned. Raw chickpeas will give you the best and tastiest hummus, but if it's your first time, you can try canned chickpeas.
If you are using raw then soak the chickpeas in water overnight. Then simmer the chick peas for 2 hours.
If you are using canned, keep the salted water and wash them out very well. Then sprinkle baking soda over them to remove the skin more easily. You don't need to do this, but it will give you a smoother hummus. Then simmer on a low heat for about 10 minutes using the salted water as a base.
You can peel the chickpeas for a creamier smoother taste. Use baking soda over the chick peas to peel the skin easily.

Tahini is basically a toasted sesame ingredient. You can either buy it or make your own using sesame seeds.
To make tahini, lightly toast 1 cup sesame seeds for 3 minutes on medium heat.. You will see them become slightly brown and the sesame aroma will also come out. This should be enough. Note: the sesame will have a strong smell which reduces over time.
Then add the seeds to the blender and blend to a couple of pulses then add in a couple spoons of olive oil and a pinch of salt and blend further for 2 minutes. Depending on your blender, this can be a nightmare due to their small size. So either ruse a milling blade.. or add some water to the mixture.
Scrape the sides and mix and finally blend again to get a smooth paste. You only need 1/3 for this recipe, but store the remaining in a tightly closed jar for next time.
Now that you have both chickpeas and tahini ready. Blend in a food processor. Add in the chopped garlic, lemon juice, oil and salt. Blend for a further 2 minutes. Allow the mixture to be nice and smooth. You can taste it and add in a bit more of what you think is missing.
If you're using a blender then sometimes it will get stuck in the bottom. So add a little water.
When you plate up the hummus add some oil to the hummus. Maybe add fresh coriander or nuts too! Toast the pitta bread or any flat bread and enjoy your halal hummus!
